Dude,
Forget scottsdale and go to Tucson. Two hours away. Mt Lemmon. 1000 routes just along the highway. Rocks N Ropes Climbing gym. Toole Ave., downtown Tucson can get you set up with a guide, or you can just climb there at the gym.

Here's a rock climbing guiding school, that has beginning rock climbing day events in the Scottsdale area (I'd call for reservations):

Here's rock climbing indoor rock walls in Scottsdale and Phoenix: http://www.indoorclimbing.com/arizona.html

Have fun!
